First Harvest: made from ultra-premium Manzanillo olives picked earliest in the season, when fruits are young and vibrant. With a much lower yield, oils are deep olive green in colour and concentrated in flavour. Expect a silky texture, fruity notes and flavours with a punchy peppery kick.
Best used for; dipping in fresh crusty sourdough, salads and finishing dishes.
Second Harvest: made from ultra-premium Manzanillo olives picked mid-season, when the fruits are an even mixture of green and purple hues.
